Turkey Love

Thanksgiving came...Thanksgiving went.

And no turkey for this girl.

I know there are so many people out there that decide to adopt a vegetarian or vegan eating lifestyle who make the decision and never look back. But I have to believe that there are others, like me, who feel at times old habits die hard. And I'll be honest, this Thanksgiving wasn't easy.

I'm the cook in the family and even though I enjoy it, I am THRILLED whenever my husband makes a dish. This time he went above and beyond, deciding to smoke the turkey this year. As far as turkeys go, it looked beautiful. It smelled amazing. I kept thinking about in the grand scheme of things how bad it would be to sneak a bite. But I didn't.

On the other hand, I'm a rock star for making every other dish vegan and it all coming out great! Mashed potatoes, gravy, stuffing, green bean casserole, mac and cheese, asparagus, collard greens, and cranberry upside down cake (not pictured). On second look, it may not be the most colorful spread - and yes, there may be a slight carb overload going on - but I'm pretty proud of the results this first time around!
